SIBERIAN BUTTER
DOES IT GO THROUGH DENMARK? AN INTERESTING LETTER. Writing to “The Times,” London, Mr James Tully, of Belfast, seeks enlightenment on a subject which is of greater interest to the dairy farmers of New Zealand than it is to his fellowcountrymen in Northern Ireland. The letter reads as follows: “Unlike your commodities as to the correctness of the not so much concerned with the use of a small or a capital letter in describing commiditles as to the correctness of the description of the article, its origin, or the country from which it is derived. In regard to the ‘great big D’ which your correspondent displays for Danish butter, I should be glad to have some enlightenment regarding the truth or otherwise of the following extract from a book I am reading at the moment, entitled ‘Vagabonding at Fifty,’ by Helen Colista Wilson and Elsie Reed Mitchell. The writers are North Americans, who have lived with the Russian people for four years, and spent a whole summer among the peasantry of Asiatic Russia. At pages 51 and 52 they state: —‘Butter is one of the few things exported in considerable quantities from Siberia. These remote Siberian villages are to an extraordinary degree entirely self-sustaining, and in many of them the butter exported represents almost the only source of money income, since they do not, like the villages of the Steppe, sell much of their grain. We learned that much of this butter, collected over such a vast area, is shipped to Denmark, where it receives Danish brands and trade-marks and is shipped all over the world. This fact may help to explain how so minute a country at Denmark is able to export such immense quantities of butter! The Siberian export butter is of uniformly high quality, systematically standardised, and every creamery is 7n charge of a trained specialist. This is one of the really developed industries of Russia.’ ”
