SPECIAL “TRIBUNE” RECIPES.
AN OLD FASHIONED DISH FOR COLD DAYS.
IRISH STEW,
About 3 lbs neck of button. 4 lbs. onions. 4 lbs. potatoes. 3 cups water or stock. Put the water in a saucepan and add the meat after much of the fat is cut off. Season with salt and pepper and stew for one hour. Then take out the meat and cut small, and skim fat off gravy. Slice the potatoes and onions. Then place potatoes, meat, and onions in alternate layers in the pot, pour in the gravy and cover closely. Season, and stew gently for at least another hour, watching that the stew does not burn. This is a savoury and economical dish for a family, and is at the same time nourishing and appetising.
