New Layer Cake
Bananas for Filling Ingredients: Two bananas: 6oz, flour; i level teaspoonful bicaibonate soda; grated rind of one lemon; 4oz. butter; soz soft brown sugar. 2 eggs: For the filling: One banana; some raspberry or apricot jam. For the icing: 2oz icing sugar; loz ground almonds, one teaspconful of beaten egg; lemon juice; green colouring ; a few mimosa balls. Grease .two deep sandwich tins, about seven inches in. diameter. Beat the butter and sugar to a cream, then add'the finely-grated lemon rind. Sift tlie ’flour with the bicarbonate of soda. Peek the bananas and mash them finely. Whisk up the. eggs, setting' asitle one teaspoonful of it for the almond icing. Stir these.' ingredients alternately into the creamed fat and sugar and mix them together lightly. Then divide the mixture between' the two prepared tins and spread it evenly; Bake the cakes for about 15 to 20 minutes. To make the filling: When the cakes are cold spread them with jam and sandwich a layer of thinly slicecl banana between them. To make the icing: Sift the icing sugar and mix it with the ground almonds. Then mix to a stiff paste with the teaspoonful of beaten egg and some lemon juice. Colour the- almond paste with some green colouring. Mix the paste well until it is smooth and evenly coloured. Roll it cut on a board dusted with sugar. Stamp out about twenty rounds with a small fancy cutter. Then press your smalt finger into the centre of each almond paste circle. Bust the cake with icing sugar and arrange the almond paste circles on the.too, using a little jam to make then! adhere. Press a mimosa ball in the centre of each little ciicle.
