PEOPLE always seem to me to eat too much nowadays. u , thi i- ke w hat they did 100 years ago apparently. 1 * was'looking at an old cookery book dated 1774 the o t h e r day, and entitled - Cookery Book of the Middle Classes > .contains a typical menu suggested as suitabie foi an ° y -dinner. The meal began with soxip, followed by a joint ot beef, two entrees—the one a species of vol-au-vent and the other a braised chicken. Hors-d’oeuvres came next second service consisted of two roast hares and. two chickens Sweets were many and various. The dessert courses included plates of strawberries and a compote of cherries w^pped cream, finishing up with three different jams. It would cost • a small fortune to provide such a royal feast nowadays even if there lives a man with an adequate appetite and sufficiently j?ood digestion.
