Cookery for Smiles
Rock Cakes.—Eight ounces flour, two ounces sugar, two ounces currants, two teaspoonfuls baking powder, two ounces dripping, one ounce peel, one egg, one teacup milk. Method: Rub dripping into flour, add dry ingredients, add egg and milk to make a stiff paste. Place in rocky lumps on a greased tin, and bake in a moderate oven for fifteen minutes. COOKIES. Egg, I. Butter, 3qz. Baking powder, 1 teaspoonful. Sugar, 1 cup. Milk, ;} cup. Flour, 2 to 3 cups. Method: Beat butter and sugar and egg together, add dry ingredients, sifted. Mix to stiff dough with milk. Roll on floured board, and cut into rounds. Moderate oven. CREAM BISCUITS Egg, L Butter, 3oz. Baking powder, 2 teaspoonsful. Flour, 2 to 3 cupsful. Sugar, 1 cup. Method: Same as Cookies. When mixed, cut into rounds, sprinkle with icing-sugar, and bake in moderate oven. Iris Anderson.
