WHY?—
Why is it Good to Boil Potatoes in Their Jackets? It is good to boil potatoes in their jackets because most of their potassium and other salts are to be found' chiefly in the cells under the skin, and so are thrown away when the potato is peeled. Not only so > but it seems probable t-liat most of the valuable substances named vitamins are also collected chiefly under the skin, and so also are wasted with the parings. [I can see you all begging mothers to have potatoes in their jackets now. Try butter with them too.—S.Q.]
