DAIRYING INTERESTS.
TNCBEASE IN OUTPUTS. The Dairy Division of the Department of Agriculture reports for the two months ended 30th September of the current producing season, as compared with those of last, year, the following gradings of butter and cheese: — 2 months 2 months 1924 1924 Tons Tons Butter .... (177:1 ;~670 Cheese .... 2936 3262 Butter shows an increase of 19.4 per cent.; cheese a decrease of 9.9 per cent. Converting these figures intb butterfat .equivalent, there is* an increased quantity graded for export of 13.2 per cent, of butter-fat, as compared with returns of the corresponding period of 1923-24. These figures are usually taken as indicative ■ of production, but they only relate to produce graded for export. A very large quantity of butter ami cheese is necessarily required for the local market. Some of this is withdrawn from stores of produce already graded for export, but the de- | mauds of 1,300.000 .people in New Zeaj land have to be taken into account, and I by no means all the butter and cheese they consume passes through the grading stores. Stocks of butter and choose held at various-grading ports in the Dominiofi at 30th September last were 4260 tons butter and 16-17 tons cheese.
