The Conference had the assistance of tho Director uf the Dairy Division of the Department of Agriculture, and th<U Director of the Dairy Research institute, Massey Oollegc. The Chairman of the conference, Mr T. W. Winks, of Hawera, announced to day that the Gonfercnci * had affirmed the principle of maintenance ami improvement in qua-lity in chceie manufacture, and the export to the Home, market of cheese of a uniformly high grade. The contereudi decided, contjiued Air Winks, that the possibilities of the more eaanomic use for cheese making ot milk, very rich in butterfat, should b.? investigated by trial shipments to the. Home market of specially biande*d cheese, which would be mad* under careful control, and would be ef a guaranty d standard in regard to butterfat content, which would bear comparison with any other exporting country. Tbrt Director *of the Dairy Division offered the co-operation of his V - partment in tests to be carried out.. The delegates were of tlii- opinion that a Solution of the problem of the Nhigh fat content of cheese and milk ’would bo found in tli!3 methods to be put into practice in the trial shipments.

The conference further appointed a committee of experts to make reports regarding a more equitable system of payment for milk supplied for cheese TnaicTlig.
