BONING OF BEEF
NOT NEW IN GISBORNE GOING ON FOR YEARS SMALL SCALE ONLY QUESTION OF LABOUR The Australian announcement of experiments being tried out with tne boning of beef for export to the United Kingdom has caused considerable interest in Gisborne, but it is pointed out that it is no new thing here. “It has been going on here for the last seven or eight years to my knowledge, but only, so far, to a very limited extent,” stated one man conned ed with the trade. “The bulk of our prime beef exports is sent in quarters, although occasionally orders are given by clients to have the beef boned.” It was pointed out, nowever, that if the whole of the beef exports had to be boned, a great deal of additional labour would have to be found, and some difficulty was expected in securing a sufficient number of skilled men for the work. The telescoping of mutton and lamb carcases was already causing a great deal of extra work, and much of this had to be done in overtime. If the boning of beef were added as an additional requirement the difficulties of the freezing works would be added to considerably. On the other hand, there was little doubt that a great saving in space would result from the boning of all beef. No additional equipment would be necessary in the freezing works, for in the work that has been carried out up to the present a good sharp knife is the main essential.
