AUSTRALIAN BUTTER
“HAS NO EQUAL.” [BY CABLE —PRESS ASSN. —COPYRIGHT.] ‘ SYDNEY, May 18. According to Mr.- W. Laffan, Senior Officer of ' the Government Dairy Branch, Australian “Kangaroo” butter has -no equal, both in flavour and body. “It is undoubtedly the best manufactured butter arriving on the British market,” he,told.u conference cf Australian dairy factory managers and secretaries in Sydney. Mr. Laffan gave impressions of his work as dairy officer in London from 1935 to 1937. He said that importers and buyers of Australian butter had expressed themselves as very pleased with- [he sustained efforts of Australian manufacturers', to produce a sound, uniform butter. He added that opinions were sometimes expressed that Australia shottld try to develop the Danish or Continental flavour. ’Long years of experience, however, had taught him that full-flavoured butter “was never a keeper.’ The fact .was well known that-Danish butter did not store well.
REFRIGERATION CONGRESS. (Recd. May. 19, 8 a.m.) SYDNEY, May 18. The first Australian Congress of Refrigeration, and Dairying, which is being held, at’ Sydney, has heard all phases of refrigeration discussed by leading- authorities here and abroad. R. Sherwood “The Role of Lactic Acid Bacteria in Cheese Ripening.” , Mr. W. Taylor, New Zealand Commissioner in Australia, was among the speakers at the formal opening of ConI gross. '
