POTATO SCRAMBLE WITH MUSHROOMS

One and a-half pound potatoes. Two ounces dripping. One egg. Quarter pint of water. Three dessertspoons chopped parsley. Two j dessertspoons chopped chives. Quarter pound mushrooms. Reel and boil potatoes in usual way, leare' till cold, then dice. Beat egg, add chives and parsley. Melt dripping in frying pan,. add potato wlie’n hot and fry brown. Pour egg mixture into pan with potatoes. Cook till egg. is set. Serve with mushrooms which have been peeled, stalked, and washed in cold water,, before being fried.
