SOKE SEASONABLE RECIPES Mince Pie. Ingredients: Boz pastry, Jib apples (peeled and minced}, Jib light brown sugar, Jib sultanas, Jib currants, Jlemon (rind and juice), J-teaspoon ground ginger. J-teaspoon cinnamon. .Method: Mix fruit, sugar, and spices, and cook between-layers of pastry in sandwich tin. Raisin Pie. Ingredients: So/, short or tluky pastry. or sufficient to make upper and under layers for pie. Filling No. 1: 2 hr. cups raisins or sultanas, -J-br. cup sugar. IJ-br. cups water, 2 tablespoons cornflour, 1 teaspoon cinnamon. .Method; Boil raisins, water, and sugar five minutes. Thicken with the moistened cornflour; boil again three minutes. Remove from heat and stir in cinnamon. When cold place between layers of uncooked pastry, and bake in moderate oven about 35 minutes. Note.—One cup cut apples may be substituted for one cup raisins. Filling No. 2: 2 cups seeded raisins. J-cup sugar, 1J cups boiling water, 2 tablespoons cornflour, 2 tablespoons lemon juice, juice of 1 orange, J-rind of 1 orange, J-rind of 1 lemon, 1 cup chopped mils. Alethod: Cook raisins, sugar, and water five minutes; add moistened cornflour and boil three minutes. Remove from heat and mix in other ingredients, When cold place between layers of uncooked pastry. Bake 35 to 40 minutes; Scotch Bun. Ingredients: lib fruit (sultanas, raisins, currants), loz chopped lemon peel, loz minced almonds, 1 teaspoon spice, 1 teaspoon cinnamon, 1 teaspoon ground ginger, J-teaspoon ground cloves, i-nutmeg (grated), TJoz butter. 2oz sugar, 2oz flour. 1 egg. Method; Cream butter and sugar, beat in egg, add flour, then mixed fruit and spices. Line a deep tin with short pastry, fill with the mixture, cover with a lid of pastry, trim edges. Bake in moderate oven 2J to 3 hours. Lemon Tart. Ingredients:— 6nz short or flakv pastrv. Filling:— Juice of 1 lemon. 2 eggs. 2oz butter. 3oz or 4oz sugar, according to size of lemon. Method; Whisk eggs and sugar; add butter melted and cooled ; then lemon juice. Mix and pour into uncooked pastry shell. Bake in moderate oven 40 to CO minutes.
Foamy Sauce. (To serve with plum pudding.) 2oz butter. 1 cup icing sugar. 2 egg yolks. 2 egg whites. J-teaspoon vanilla. J-cup cream, whipped. Cream the butter, add the sugar gradually. Add well-beaten egg yolks and heat over hot water. Fold in stifflybeaten egg whites, vanilla, and whipped cream if desired. Serve hot on plum pudding.
