RICH FRUIT CAKE There is a sort of Christmasy feeling in the air as the Coronation draws near, and preparations are being made to receive friends, who will call during the next few weeks expecting light refreshments. _ A _ noble standby for these occasions is a slice of rich fruit cake. 11b raisins. 11b sultanas. 11b currants. Jib mixed peel. 3oz crystallised cherries.Jib almonds. 11b butter. 4 breakfast cups flour. 2 teaspoonfuls baking powder, 2 breakfast cups sugar, 10 eggs. 1 wine glassful brandy. Method: Cream the butter and add the sugar. Add the eggs unbeaten one by one. Sift the flour and add the baking powder to this. Add the flour and baking powder to mixture, then add the fruit, etc., lightly dredged with flour. Last of all add the brandy. Pour into prepared tin and bake at least five hours. This makes a light-coloured cake but a very good tasting fruit uake. Ice as 'desired.
