The following unusual recipes have been sent in, and are highly recommended:— Wholemeal Eggless Cake. Quarter-pound butter,*' Alb sugar, half a cup of white flour, one and a-half teaspoons of cinnamon, three cups wholemeal, one and a-half cups milk, three level tablespoons cocoa, one and a-hajf level tablespoons soda, one cup dates, one cup nuts, three tablespoons golden syrup. Method: Stir one cup of milk, sugar, butter, and syrup in a saucepan till butter is melted. Dissolve soda in other half-pup of milk. . Mix dry ingredients and add above mixture, nuts, dates. Add soda last. Bake for half an hour. Allow to cool before turning out. Whey Fluff. Two tablespoons gelatin, quarter-cup cold water, two cups whey, two-thirds of a cup of sugar, (three cups of milk makes two cups whey), rind and juice of half a lemon, raw carrot finely grated (one cup), one egg white. Method; Soak gelatin an cold water. Dissolve, it by setting cup in pan of boiling water. Mix, and set to cool. When it begins to thicken, beat and add lemon juice, rind, and carrot. Fold in egg white. Serve with custard or whipped cream. Cottage Cheese Custard. One cup milk, one egg, two tablespoons sugar, one teaspoon gelatin, two tablespoons cold water, half-teaspoon vanilla, one cup cottage cheese. Method: Heat milk. Pour gradually over beaten egg yolk. Add sweetening and cook mixture until it coats the (spoon. Soak gelatin in cold water. Dissolve by setting cup in boiling water. Beat egg white until light and add vanilla and dissolved gelatin. Beat until very stiff and fold into custard mixture, and chill. Just before serving add the cheese slightly salted. Magic Lemon Cream Pic. Three-quarters of a cup o? erapker crumbs (ginger crackers are best). 3oz melted butter. Filling: One small tin condensed milk, half-cup lemon juice (two lemons), grated rind of lemon, half-cup cream, two tablespoons finely powdered icing sugar. Method: Blend milk, rind, and juice. Pour in pan lined with crust. ' Pile with cream on top and chill.
