Kidney Soup. Scandinavian Pudding. Baked Stuffed Marrow. Feathered
Potatoes. Apple Amber.
Scandinavian Pudding (the family will enjoy this). —lib sausage meat or minced pork, 1 cabbage, 1 small onion, \ cup fresh breadcrumbs, 1 egg, salt and pepper.
Sprinkle cabbage leaves and plunge into rapidly-boiling salted water. When wilted, remove, drain, and line a buttered pudding basin with some of the leaves. Chop and saute onion in a small quantity of butter. Add onion to the minced pork or sausage meat and breadcrumbs and bind the mixture with the egg, slightly beaten. Fill the basin, using layers of mixture and cabgage leaves. Cover with greased paper and steam 1£ hours, unmould, and serve with hot tomato sauce.
Apple Amber.—2lb apples, 4oz sugar, 2oz butter, 2 eggs, rind and juice of 1 lemon.
Cook the apples with the butter, sugar, grated rind and juice of lemon. When quite tender, beat well and add egg yolks. Pour mixture into a buttered pie dish and cover with a meringue made of the stiffly-beaten egg Whites and sugar. Bake in slow oven until meringue is lightly browned.
