Let the mixture stand for a time, and just before using mix with just enough cream to make it spread easily without being too moist. The cream may be omitted and enough honey used to make it spread. Use between slices of brown bread, gingerbread, or sponge cake.
Rabbit Mould.—Cook 2 young rabbits very gently with a good slice of lean ham, a bayleaf, and a bunch of herbs, in a quart of water, till they are so tender that the meat will easily leave the bones. Take out on a dish and cut the meat up into dice. Put back the bones into the liquor and cook for another hour, and add loz of gelatine, and stir till dissolved. Arrange the meat in a plain mould, with a few slices of cooked ham or tongue and some slices of hard-boiled egg. Strain the liquor, and when cold pour gently over the contents of the mould.
