Picnic Sandwich Filling—A delightful sandwich-filling,.which is as nourishing and sustaining as it is delicious, is made as follows. Put through the mincer half, a teacupful of dried figs, half a teacupful of stoneless raisins, a teacupful of walnuts, and an apple. Mix well with a tablespoonful of thick honey or castor sugar. Let the mixture stand for a time, and just before using mix with just enough cream to make it spread easily without being too moist. The cream may be omitted and enough honey used to make it spread. Use between slices of brown bread, gingerbread, or sponge cake.

Rabbit Mould.—Cook 2 young rabbits very gently with a good slice of lean ham, a bayleaf, and a bunch of herbs, in a quart of water, till they are so tender that the meat will easily leave the bones. Take out on a dish and cut the meat up into dice. Put back the bones into the liquor and cook for another hour, and add loz of gelatine, and stir till dissolved. Arrange the meat in a plain mould, with a few slices of cooked ham or tongue and some slices of hard-boiled egg. Strain the liquor, and when cold pour gently over the contents of the mould. Set in ice chest. This dish is best packed still in the mould and turned out when wanted. A salad of cold vegetables, French beans, and carrots, for instance, watercress, and lettuce leaves, and a bottle of mayonnaise should be added.

Apple Cinnamon.—Stew two pounds of apples with half a teaspoonful of cinnamon and a little water until soft; rub through a sieve, add a lump of butter, sugar to taste, and a tablespoonful of lemon juice. Then stir in two beaten eggs. Grease a pie-dish, cover the bottom and sides very thickly with cake or bread-crumbs, put in the apple, and bake in a moderate oven for 30 to 40 minutes. Turn out, and serve with custard or cream.

Cider Cup.—Take 1 lemon, 1 tablespoonful castor sugar, 1 inch sliced cucumber, i wineglass sherry, soda water, 1 pint cider, ice. Put the juice of the lemon and the sugar into a jug with the sliced cucumber. .Add the sherry and the cider and stir them together. Let the liquid stand for an hour in a cool place or on the ice. Strain and add the soda-water and some chipped ice. Then it is ready to serve.
