MILK AND CREAM PAYMENT ACCORDING TO PURITY..
In an interesting article in this month's issue of the Journal of Agriculture, Mr. D. Cuddy, Director of the Dairy Division of the Department of Agriculture, suggests a system of payment according to standard of purity. " From the beginning of the factory system," he says. " the delivery of pure, clean-flavoured milk for cheese and butter making has been recognised as one of the most important factors in turning out dairy produce of the very best quality." He points out that unfortunately under the present system^ milk and cream is being accepted at dairy factories and paid lor at the same price, irrespective of its class or purity. "After a good many years of experience," adds Mr. Cuddy, "it must be candidly admitted that the official inspection of milking sheds, yards, and dairy utensils can be described only as a partial success in raising the standard of purity in factory supplies." He asks if it would not be more effective to place the question of improving dairy factory supplies of milk and cream on a purely commercial basis by paying a reduced price per pound oE butter-fat for quantities of raw material which can yield pioduce of only indifferent quality? In this way the premium that would be paid for the better deliveries would, go to -the men who deserved it. He recommends that the "curd test" be used in determining the purity of the milk.
