TO THE EDITOR. Sik— Several correspondents havo latoly complained that the prico of butchers' moat lias been raised considerably within the last year or so, and havo mentioned some singular anomalies with regard to the different prices charged, which I think it would task ovon a butcher to explain. Howover, as regards tho prico, I am contented myself ; but it is the bad quality I have to complain of. It is now. indeed, a matter of great difficulty to obtain good meat in this oity ; and I have no hesitation in saying that a great deal of the meat exposed for sale would bo promptly condemned by a competent and independent Inspector. Could we havo such an officer appointod? The beef is generally better than the mutton, but then it is often spoilt by bad troatment in the slaughterhouse, and perhaps from the hour the boast leaves tho pasture. As to the mutton, it is simply unfit for food. I supposo we cannot expect it to eomparo with what wo get at a friend's table up country, fresh off the grass, and no doubt the best will always go to tho freezer ; but the quality offered to the retail buyer gets worse and worse, and it would seem that butchers now think tho public will accept anything. W« are a family of ninOj and until thoro is an improvement in quality we have resolved to buy as littlo as we possibly can. The butchers aro to have a meeting of their trade shortly, I believe, and I would suggest that they should conhider this matter. Bad quality should mean bad trade. I am, &0., Householder.
