"We want the ■ finest quality and the freshest cream, we can possibly get. Time after time the results of our investigations have borne out this one signaficant fact," declared Professor W. Ridett, director of the Dairy Research Institute, when addressing the dairy factory managers at present attending Massey Agricultural College, Palmerston North. Professor Ridett stated that New -Zealand would not have to go to any great expense to secure fresh cream. What was required was the daily delivery of the cream to the dairy factories, farm inspection, the avoidance of food flavours, and similar precautions.
