When the family come home ou a hot day, they will relish a long, cool drink, and barley water is ideal to quench their thirst. If you make it often, you can vary the flavour by adding juices of different fruits. Here are two simple ways to make barlev water Ad'd to four pints of water four tablespoons of well-washed pearl barley. Let it simmer slowly for. 20 minutes. Strain and pour into a jug, in the bottom of which has been placed sufficient sugar to sweeten, and a lemon cut in slices. . Another method is to put the rind of one lemon ou to boil with one pint of cold water. When boiling, add one dessertspoonful of patent barley, mixed to tlie consistency of cream, with cold water. Add to boiling water and lemon, and stir till boiling again. Let boil three minutes. Have ready the juice of two lemons in a large jug, and three tablespoons of sugar. Pour boiling mixture on to it, and fill up to two quarts with cold water. An orange and lemon can be used, if preferred.
