To-day’s Recipe “KIDNEY POTATOES”—A SPECIAL CAKE

A recipe for these special cakes, which can be made to look like real potatoes, is: Sponge cake, almond paste, jam, or lemon cheese, white of one egg, slightly beaten, 2oz. powdered chocolate or cocoa, almonds blanched and cut into strips. Cut sponge cake into rounds, split, and spread with a little lam (raspberry or apricot). Roll almond paste out. and cut into rounds a little larger than the cake pieces. Brush paste over with white of egg. Put a piece of cake in the centre, and fold paste over it. Mould the paste into the shape of a potato. Brush over with white of egg, and roll in cocoa. Push one or two strips of almond into each. Allow to dry, and sprinkle a little dry cocoa over them before serving.
