To-day's Recipe BAKED FISH ROLL

Two cups cooked fish (flaked), 1 clip mashed potatoes, 2 eggs, pepper. loz. butter, 1 extra egg (for crumbing), breadcrumbs, squeeze of lemon juice. ■ Mix the fish with the'mashed potatoes, season with pepper and lemon juice, and add the butter, melted. Stir in the two eggs, slightly beaten, and mix to a firm consistency. Form into a roll, brash with the beaten egg, and roll in breadcrumbs. Place in a buttered tin or fireproof dish, dot a few pieces of butter over, and bake in a hot oven for half an hour. Serve with lemon and parsley garnish, and cut into thick slices for each portion.
