Tb boil rice quickly and, economically, put on in boiling water and, allow to simmer for .twenty minutes, so that the grains will separate nicely for serving, pour in a cup of cold, water before removing from the fire, then strain. Haricot beans and butter beans will both cook more quickly if the salt is not added, until they are tender. The quickest way to add butter or lard, when making cakes is to grate the fat into the flour on a suet grater. If oranges are covered with boiling water before peeling them, the bitter white part comes away easily and they are peeled more, quickly. It is an easy matter to remove the skins from beetroots if they are plunged into cold water immediately after cooking. When any waler used in cooking is once brought to the boil the gas should be turned down so that the liquid simmers and. does not boil strongly. Hard boiling spoils food and wastes gas.
