FOR THE SWEET COURSE
Auiericau Lemon Pie.— This may seem a lot of trouble at first sight, but it really isn’t. The lemons can be stewed a day or so before wanted, but so that they shall not be bitter, the recipe needs following closely. Well wash two nice lemons and cut in slices, cover with cold water and leave all night. Next day remove from the water, cover with 41b. sugar, and stew gently (on an asbestos mat) 3 hours. The water they were soaked in should be thrown away. Take out the lemon carefully, place in a sieve or collander to drain, dusting sugar thickly over and putting aside to cool. Now warm 1 pint milk, pour over 2 tablespoons cornflour (previously made in a paste with cold milk), mixing most carefully together. Add 4oz. white sugar, 2oz. butter. Stir well. When cool add 3 stiffly-beaten eggwhites, grated rind and juice of a lemon. Line dishes with pastry. Cover with a thick layer of stewed lemons, then a much thicker layer of cornflour mixture. Bake in a sharp oven till pastry is done, then serve with sifted sugar over. Note.—This recipe is just as it came from America, but I personally prefer only a thin layer of the stewed lemon at bottom of pie. Oranges can be used if liked. Apple Tapioca.—One cup pearl tapioca, lib. apples (uniform size), a few cloves. Wash tapioca, drain and soak overnight in 1 pint sweetened warm water. Peel and core apples. leaving them whole, place a clove in each and put in pie-dish. Pour tapioca oyer and bake till tender. Serve with cream and sugar.
