CASEIN AND FAT.
IN MILK 01" COWS OF DIFFERENT
MEEDS'.
During the past two or three years the Ontario Agricultural College and Experiment "Farm authorities have been investigating the relative amounts of casein and fat in tho milk of cows belonging to the different breeds. The following statements appear in their 361h annual report:— , "The average number of days milking per cow during the period of testing was 221. The Ayrshires produced the greatest number oi' pounds of milk, fat, and casein. Tho highest average percentage of fat and casein in tho milk by breeds was in that of the Jerseys. The .average percentages of fat and casein for nine cows were respectively 3.9G and 2.38. "The range in the percentages of fat and casein in individual cow's milk for the period of the test was from .3.-11 to 4.88 for" the fat and 1,91 to 2.68 for tho casein. None of t'he Ayrshires showed such a wido variation in percentages of fat-atld casein in .their-milk as did cows representing tho other two breeds. "Tho percentages of fat and casein tends to increase quite markedly towards tho end of tho period of lactation. So far as we can judge from the data on hand, tho feed does not appear to affect the percentages of fat and casein in the milk. Lactation appears to be a more important' factor than either feed or season of the year. ; "The Jerseys produced 1.761b. of fat for each pound of casein in tho milk, or •sGlb. of casein for each pound of fat. The Holsleins produced 1.631b. fat for each pound casein in milk, or Glib, casein for each pound of fat. The Ayrshires produced, 1.591b. of fat for cach pound casein in milk, or .621b. casein" for each pound fat in milk."
