DAINTY ORANGE RECIPES.

Orange Cheesecakes.— Make' a mixture as for/lem'oh curd, substituting orango lor )e&oin.""Hju* iteady. 'some' pastry cases, fill'with'theoraugq J cufd, anu servo- ■colli. An alternative mixture for filling may be made, with flic', pounded boiled Tind at' an orange,: adde"d,;tp the: juice, pulp,; a.littlo sugar, and fresh, butter. '. •' ■ Orange ■ Meringue.—Prepare a .compote of oranges-and. arrange the , fruit on a' layer of. boiled rice, in a pio dish. Cover with., a thin layer of the 'rice and pile over all a meringue mixture of stiffly whipped-white of egg and castor sugar. Place'in "the'.oven till tho meringue is slightly browned. . Serve immediately, with an ornamental paper frill round tho pio dish.: , ..,,.. Orange .-Eussc—Line a mould with halved spongo lingers;: Fill the centre with, orange jelly partially cooled, bet, ou ice get firm; Turn out into a glass dish, ■ decorate with whipped cream and crystallised violets.
