(Specially written for The Dominion.) SATURDAY; Stewed Ox-tail. Potatoes. Cabbage. ( Stewed figs. Rice pudding. SUNDAY. Iloast pork. Apple sauce. Potatoes. Cabbage. Plum pudding. Fruit jelly. " ./" '.FOR SUPPER.. Cold pork. Chicken in aspic. Salad. Lemon sponge and jelly. ; STEWED OX-TAIL. " j One ox-tail, 1 teaspoon salt, 1 pint water; loz. .dripping, loz. flour, naif small, teaspoon, pepper,, vegetables. Mix flour, salt, and pepper, wash tho tail, and cut into joints. Dip joints into flour, etc., and brown them in dripping. Brown also large onion. Have carrot and turnip cut into. dice. Poilr away fat from pot; put back meat and onion a.nd,l.pint hot .water. Stew gently for about two hours,' until. the 'joints' are almost :tender;, add: carrot and turnip and stew another hour;' take out joints; strain gravy and, make it thicker with :flour and. seasoning-if necessary.
