THE BEST FOR CHEESE FACTORIES. ' Every dairy breed has its admirers; Some swear by the Jersej;s, some by the Ayrshires, and others again pin their faith to the Hoi- . steins and the' milking Shorthorns. :Our Wairarapa correspondent asked an experienced North lslaud cheese-maker the other day which was really the best dairy breed.- '■ "Well, for cheese making," was the reply, "I believe in the cross produced: by mating a purebred Holstein bull with a crossbred Shorthorn." Why? "A Holstein Shortlioni cow.will give a good average tost with a greater supply.of milk than'any .other breed. . A high test is not required for cheese making, if one can obtain an increased milk supply of fit) per cent, over the supply from a high-test cow." " Our correspondent'interviewed a much experienced dairy, farmer on the subject. _ \ "Donjt believe iu the Holsteins," was his answer." "They give a lot of milk, but they are too big,-and eat too much. If you want a good dairy cow, get hold of an AyrshireShorthorn crossbred. These ■ animals are hardy; they will stand the rigours oftho climate, and they, will give a good average .milk supply. Ayrshires are the cows.
