HOW MUCH BETTER DO WE EAT?
THE- VALUE OF THE LOCAL MARKET. This question is suggested by the fact that in tho season 1900-7 the Taieri and Peninsula Milk Supply Company, of Otago, produced about 1800 tons of butter. The suppliers number about 1900. Its output is just about equal to the output of the New Zealand Dairy Association of Auckland, but its suppliers are twice as many. The two companies combined produce over 17 per cent, of tho whole output of tho butter factories of New Zealand. , . It is i estimated that New Zealanders eat about 11,000 tons of butter in a year, equivalent to an average of a little under a quarter of a hundredweight per head, or about half a pound each per week. We send to Britain about 15,000 tons of butter per annum,'and-the total output of New Zealand butter for local and distant markets combined is thus about 26,000 tons. It is apparent from these figures that the local market has an important interest for the butter producers, for Now Zealanders eat nearly half of. all tho butter they produce. And it is said they pay tho best prices for it.
