Perhaps' ono of tho best arguments that can bo adduced in favour of Now South Wales as a suitable field for immigration (says the Sydney "Telegraph") lies in tho fact that , during tho past f«w years a rapid incrcaso has taken placo in the consumption of foodstuffs por head of tho population, many of which, in European countries, would bo regarded in tho light of luxuries boyond tho .pocket of all but the wealthy. This applies particularly to tho marked increaso in tho local demand for buttor, an articlo of diot largoly donicd to tho poorer classes in Germany, Italy, and even in England. Tho figures for New South Wales havo now readied considerably over 36,000,0001b: per annum, representing tho total consumption, or roughly about 251b. per. head, being an increaso of 91b. for each individual in tho State sinco 1890, when it stood at just ,161b. per head of tho population. Tho figures apply only to butter produced in tho factories, and do not include tho enormous quantities manufactured for privato uso on tho fann3, which mijat necessarily still furthor increaso the pro rata consumption.
