THE CASE FOE WATERED MII;K. - A gentleman who has been in a position to know something about the milk trade of ' Auokland'city asserts that there were somo strong arguments against the milk standard that never came out at the recent' Auckland meeting. • , •., ./ What were they ? asked a Dominion representative. " Well," said this authority, "some of tho inilli-yendbrs in- Auckland possess a separator;" '. Why not?, ."That separator exists for the purpose of skimming tho cream from the milk, and if a standard. of 3.5 is fixed, , that standard limits tho amount of cream they can take off their milk." You say; the' Aucklandors sell skimmed ■ milk? :■■■ I say I believe that some of them skiin part of their' milk and mix it with the now milk. . And after all, that is quite legitimate. Nobody, can complain at a rnilk vendor'skimming off part of the cream so long as he leaves enough on. If a man has - a Jersey herd, for example, giving a high percentage of cream, is there anything wrong in his reducing the cream down to the level of ordinary milk? But milk with 3.5 per cent, of cream is ..weak enough: and when tho Aucklandors'protest that they cannot produco it I —well, I doubt them. Tho tests at the various butter factories show what they can do. No, I don't think the existence of a sopa'ra.tor should bo 'prohibited on the. premises . of;a milk vendor. Let,him be judged en- . tirely on the'test'. The salo of cream is legitimate, and if his half-skimmed or watered milk is as'rich as the new milk of another Vendor, Avho'can complain ? "
