Scrub potatoes and leave twenty minutes or half an hour before peeling, and they will not stain the fingers. Potatoes' should roall? bo' boiledm their skins, and peeled , just beforo serving.: Tho most nourishing part of tho ycgetablo is just under its skin, and by peeling it raw it is,removocl. When the potatoes are ■peeled after cooking tho thinnest skin only will come off. After peeling, return the potatoes to tho saucopan to heat and dry.
