Analysis continues of salmonella strain
An unusual strain of salmonella Hindmarsh which has not been notified before to the Health Department in Christchurch is being analysed, says the senior health protection officer, Mrs Karen Brooks. Seven cases of salmonella Hindmarsh had been reported to the Christchurch health department unit since December. Two of the sufferers were found to have eaten chicken before food poisoning symptoms became apparent, she said. “Chicken and eggs are suspect because these naturally contain salmonella but, like other food poisoning sources, it comes down to hygiene,” Mrs Brooks
said. She said the unit was eager to pinpoint the strain’s source before it became more common. “Chicken is not the only possible source of the strain but, it’s an area we are watching closely.” The prevalence of the organism in chicken meant it was important that chicken was cooked properly, she said. “Cutting raw chicken on a board and then carving cooked meat on the same board afterwards should be avoided. “Cross-contamination of cooked and uncooked food accelerates the organism’s growth,” Mrs Brooks said.
