Potato research

Sir, —The comments of your correspondents, Denise Anker and Bernard Howard (January 20), on potato research and potato quality are heartening. One D.S.I.R. scientist spends 60 per cent of his time researching understanding of potato quality and campaigning for improved consumer quality, paid for by D.S.I.R. research funds from the chemistry division. Who otherwise would fund such work? The Potato Board expires on March 31. It is illegal to sell green potatoes to Denise Anker and she may complain to the vendor or the Health Department. Both correspondents, and anyone else interested, may learn more by attending the meeting of the Royal Society, Canterbury branch, on March 9. I believe in quality and variety for an informed consumer. But how can that consumer pay to achieve this? —Yours, etc., PETER MEREDITH. January 20, 1988.
