3.5 kg tomatoes, apricots, plums, etc. Ikg apples 3 large onions (optional) 1 litre malt vinegar 2 Tblspns salt 4 cups white sugar 1 tspn cayenne pepper (optional) 2cm piece root ginger, chopped 1 tspn each of black peppercorns, allspice, cloves Method: Place prepared and chopped tomatoes or fruit apples and onion in pan with vinegar, salt, sugar and spices tied in muslin. Simmer until mushy. Put through a colander or sieve to puree. Return to a Clean saucepan. Boil, stirring until thick, about one hour. Pour Into hot clean bottles. Seal when cold.
