Pinwheel biscuits
This is a plain biscuit mixture with a delicious topping which is rolled up with the dough. You will need:— 2 breakfast cups sifted flour | teaspoon salt 2 teaspoons baking powder 2 tablespoons butter | cup milk Method:— Mix the dry ingredients together in a bowl. Rub in the butter well. Stir in the milk with a spoon, gradually. Stir well until the dough is smooth and firm. Dust a baking board with flour. Put the dough on to the floured board. Knead gently for about half a minute. Roll out the dough till it is Icm thick. Topping:— 4 tablespoons soft butter | cup brown sugar I cup chopped walnuts i cup raisins or dates Spread the soft butter on top of the dough. Sprinkle the brown sugar,
chopped nuts and dried fruits over the butter. Roll up the dough loosely. Cut the roll into slices, 2cm thick. Place the slices well apart on a lightly greased oven tray. Bake in a warm oven at 350-400 degrees for 15 to 20 minutes. HOT PUFFED CHEESE SANDWICHES These are fun to make and good for a supper snack. You will need:— 1 cup grated cheese 1 egg 2 tablespoons milk A few grains of salt i teaspoon paprika (if you like it) Break the egg into a bowl and beat well. Add the grated cheese, milk, salt and paprika. Blend the mixture well. Toast the bread on one side under a grill. Spread the cheese mixture on the untoasted side. Cook under the grill until the cheese puffs up and is light brown in colour.
