Chocolate ripple cake
Chocolate Ripple Cake is an unusual cake of the rather heavier- variety and containing nuts and a flavouring of chocolate. It is made in a ring tin. 4oz butter 1 cup sugar 2 eggs li cups plain flour i teaspoon salt 1 teaspoon baking powder 2/3 cup milk 1 tablespoon cocoa Extra 1 cup sugar 1/3 cup chopped walnuts Extra 1| tablespoons butter Method: Cream the butter and i cup sugar until very light and fluffy; add
eggs and beat well again. Sift flour with baking powder and salt and add alternately with milk. Spoon one third of this batter into a well greased ring tin. Mix the cocoa, sugar and walnuts together and sprinkle half of this over the batter in pan. Dot with half of the extra butter then cover with another third of the batter. Cover this with the remaining sugar, walnuts and cocoa mixture; dot again with butter and cover with remaining batter, smoothing top with back of spoon. Bake at 350 for 35 minutes and allow to stand for smin before turning out on to rack to cool.
