Eating-House Hygiene

Sir,—Referring to the article in “The Press" regarding the lack of hygiene in eating houses and foodhandling premises, I am sure that most people feel rather nervous about dining out. We have been aware for some time that these conditions do exist, but when we read in black and white just what a threat to public health these appalling conditions can be, I feel that the proprietors of these particular premises get away with their careless attitude too easily. We all like to dine out, and I, for one, would like to know that I was eating a hygienically prepared meal and be sure that I would be still alive the next day. I feel that the public have a right to know who the offenders are. Would not this be the surest way of bringing these kitchens up to the required standard?— Yours, etc., J. MOWAT. May 27, 1970.
