Cooking For’69 Budget-Saving Tasty Pie

(Bv CELIA TIMMS) A com and pineapple pie is another budget-saver with sausage mince as the basic ingredient Although it takes a little time in preparation, it makes an excellent economical meal. To serve six you will need: 2 lb potatoes 3 tablespoons flour 1 beaten egg Salt and pepper 1 lb sausage mince 1 dessertspoon fat 1 small tin whole-kernel corn 3 slices tinned pineapple or pineapple chunks 1 cup fresh breadcrumbs Grated cheese Butter Method: Peel and chop potatoes and boil in salted water until floury. Drain and mash thoroughly. Beat in sifted flour, egg and pepper and salt and mix to a stiff consistency. Spread over base and sides of greased pie plate about jin thick. Bake at 350 until browned and crisp. Keep warm. Heat fat in pan, add sausage mince and lightly fry, turning frequently to prevent crusting. Drain well on absorbent paper. Drain com and add to finely chopped pineapple and add to meat; fold in breadcrumbs, salt and pepper and fill into prepared shell. Top with grated cheese and dot with butter. Bake at 350 until top is browned lightly and mixture is piping hot.
