AGE TEST

The best test for the age of an eating fowl if you are buying it fresh is to press the end of the breastbone furthest from the head. If the bird is young there will be a quite noticeable “give” in the bone, but if the bird is old the bone will be hard and unyielding. If the bird is fresh the feet should be moist and soft, the eyes bright and full, and the skin clear, unbruised and unbroken.
