Cooking For 1966 PUMPKIN PIE

'By CELIA TIMMS] The Americans long ago discovered the delights of a pumpkin pie. There is something unique in the flavour, and if one likes it, a very real danger exists of becoming an addict. This recipe for pumpkin pie is of American origin. Ingredients: if cups of mashed cooked pumpkin 3 eggs Two-thirds of a cup of brown sugar If cups light cream or unsweetened condensed milk i teaspoon each of salt and ground ginger t teaspoon each of nutmeg and cinnamon red currant jelly 3 tablespoons blanched. toasted almonds Flaky pastry or short crust 4 tablespoons icing sugar i teaspoon cream of tartar. Method: Choose a dry’ pump kin, which should be cooked in as little water as possible, preferably steamed, and very well dried before mashing. It must not be wet and mushy. Line a pie plate with flaky pastry or short crust. Brush it with melted red-currant jelly and sprinkle over with the almonds, coarsely chop ped. Over them sprinkle about two tablespoonfuls of melted butter. Set in refrigerator while preparing the following filling. 7

Beat well two egg yolks with one whole egg and the sugar and then add the cream and beat again. Into this beat the pumpkin, which should be put through a sieve: then add spices and salt. Mix thoroughly and pour into pie crust on top of almonds. Bake in hot oven (400 deg for 10 minutes. Then reduce heat to 325 deg and continue cooking for another 30 minutes, or until the filling has set and the top is golden brown. When the pie is almost cold cover with a meringue made from the two egg whites, the icing sugar and the cream of tartar. Pile up high and sprinkle with finely chopped or sliced crystallised ginger. Bake in very hot oven for four or five minutes until meringue is lightly col-1 cured. Serve when cooled, but! not chilled.
