By their use of spices and sauces the Japanese have developed entirely new ways of preparing and serving mutton. and thanks to a new recipe booklet issued by the Meat Board, New Zealand cooks can try out such fascin-atingly-named dishes as “Mutton With a Hat On," and “Five Smells Saute.” Though some of the spices and ingredients used in Japan are unprocurable here, a list of satisfactory substitutes has been included in the booklet to bring all 13 recipes within everyday home-cookery range.

Scope for variety according to taste is possible in all the recipes by using individually preferred combinations of vegetables and seasonings.
