QUALITY OF FLOUR

“English Bakers Do Not Grumble”

English bakers did not grumble about their flour. Mr E. W. Hullett. director of the Wheat Research Institute, said at yesterday's sitting of the Committee of Inquiry into the Wheat, Flour and Bread lindustries. This did not imply that New Zealand bakers were grumblers: it was simply that the flour in England was better. Millers in England also were happier. “They have the world's wheat at their fingertips,” Mr Hullett said

The colour of flour needed improving in New Zealand. Mr Hullett said. The institute was using a new instrument for measuring flour colours, and it was hoped that this might result in some improvement.
