Baking, Preserving With Cheaper Eggs

The seasonal drop in the price of eggs was announced this week. Coinciding with the spring increase in the number of laying birds, this lower price always stimulates retail demand. In most homes there should be more eggs on the menu and more cake*—now. The prudent housewife will also put down several months’ requirements of eggs while they remain at their present low price. This year wiH be remembered by wholesalers and indeed by all connected with the grocery trade as one of frequent delays in receivii
overseas and North Island supplies. Primarily because of the heavy imports, the port of Lyttelton has been congested for weeks at a time, with consequent delays at the railways sorting sheds. Congestion is again serious and, in spite of overtime working, delays in sorting are considerable. Instances have been quoted of goods taking four weeks from an Auckland factory to reach Christchurch shops. NJC. Orange Juice.—The manufacturers of Gold Fruite products in Auckland Will shortly be releasing New Zealand canned orange juice. It will be available in two packs the retail price being 3s 9d for 30oz. A commercial pack of lOOoi per can will also be on the market. Orange juice is becoming more popular and the variety canned by Greggs, in Rarotonga, is now on quota to distributors because of the heavy demand.
Instant Pudding.—Under the brand name of Royal, an instant pudding is being prepared in Auckland. Directions are similar to those for other brands and the product is available in a variety of flavours. On the packet are some interesting recipes which should appeal to housewives.
Marmalade Pulp.—To meet the growing demand for this Sroduct. a new marmalade is eing prepared under the brand of Gold Fruite. It will be available in a 30oz can which is expected to cost approximately 3s Bd.
Canned Tuna.—The recent press reports regarding the purchase of a fishing boat by J. wattie Canneries and the granting of a licence by the Government to fish for tuna has come as good news to the trade. If this enterprise can be carried out successfully by the cannery it should be a good help in relieving the shortages of all canned fish brought about by the severe import restrictions Canned tuna is a large seller in the United States, where the most popular brands are packed. Some have been imported here in recent years.
