NOURISHMENT IN EGGS
“All Sizes Have Same Value” (Special Correspondent N.Z.P.A.) LONDON, January 13. Small eggs, medium eggs, large eggs—they all contain the same mount of nourishment, said Mr W. J. K. MacDonald, general manager of an egg producing company which markets 2.500,000 eggs weekly. He was criticising the Egg Marketing Board for not making this fact known to British housewives who generally pay 6d a dozen more for large eggs than they do for small. Mr MacDonald said nourishment in an egg was in the yolk, which was the same size in large, standard and medium eggs. The extra money for bigger eggs only bought albumen, the white part. “Smaller birds producing smaller eggs from less food are one of the developments in the poultry industry that has come to stay. Why won’t the board recognise this and tell the housewife? It means that just as good eggs as large ones can be produced for her more cheaply.”
The “News Chronicle” comments: “A small egg is every bit as good as a large one except it has not got the snob value.”
