PRACTICAL AID FOR BAKERS

WORK OF RESEARCH INSTITUTE Officers of the Wheat Research Institute are now visiting bakeries in order to help remedy baker's problems on the spot. The director of the institute (Mr E. W. Hullett) told the Wheat Research Committee yesterday that in the past the service offered to bakers by the institute had been limited to recognising faults in bread and making recommendations as to remedies, but this was felt to be not enough. “An unusually large number of requests was received from bakers for visits by the staff,’’ said Mr Hullett, in a report covering the period from April 18 to July 31. “In six instances a careful examination of procedure was called for and this necessitated extended visits. Brief visits were made to about 20 other bakeries in Auckland, Wellington, and Canterbury.”
