MEAT-FREEZING IN BUENOS AYRES.
Mr Batemaa, who, it will be remembered, proceeded to Buenos Ayres with some stud sheep, has supplied some in-
teresting particulars to the Melbourne Argue, aad our contemporary cays:—
We will first refer to this gentleman's visit to one of the chief meat-freezing establishments in Baenoe Ayres. It is situated on the banks of a river navigable for steamers drawing from 18ft to 20ft of water, about 300 miles from the mouth of the Iα Plata. The bank of the river on which the works are built is 80ft above water-line, and the budding* are erected on the ace of the bank, and arranged with, due regard to the saving of labor. The live sheep enter from the top of th« bank, wbrae .they are slaughtered. When dressed the earcaases are sent down a shoot to a large open apace eneloeed with fine wire netting, as a protection from files, where they are left to set. From tbia stage they go down to J the freezuur department, also by means of a ahoot. This department comprises four | chambers, each cipable of holding 10,000 carcases. By working ordinary hours 1600 sheep per day can be put through, and doable that number by working night sVufta. It is looked upon as one of the beat-appointed meat-freeziajr establishments in the country, and Mr Bateman considers it the most perfect of its kind in the world. At the present time a sheep weighing 501b. dreoed fer the freezing chamber. costs tiro national dollars, or Ba, but if bought by a company employing- English capital the cojt would be only ss, gold being at a high premium.
