OYSTERS MORNAY
One dessertspoonful butter, one dessertspoonful flour, half pint milk, lemon to flavour, salt, pepper, two dozen oysters," breadcrumbs, grated cheese. Melt the butter, add the flour, add the milk graduallv. Bring to the boil, stirring all the time Boil five minutes. Add the salt, pepper and juice of lemon and the bearded oysters. Picpare individual scallops by greasing with butter and sprinkling with crumbs. Add the oyster mixture, sprinkle with breadcrumbs and grated cheese. Brown in a hot oven 10 minutes. Serve hot, garnished with lemon and parsley.
