I note "C.F.D.V reply to my letter regarding the above, and I hasten to correct any falseimpression by pointing out that my previous letter did not say that the- best New Zealand flour is only obtainable from the South Island. Indeed, in your own city you ihave mills turning out a product that is second to none, and you are capable of producing a firstclass loaf without the addition of one pound of foreign flour. No baker can tell me he is working without a margin of profit so long as he is prepared to pay euch high prices for the imported article. Judging- by the Auckland imports, the bakers of your city are perhaps the worse offenders in this respect in New Zealand. M. WOOD. Clinstchurch.
