'•"Weddei's Annual Review" says that a wider application of pasteurisation in New Zealaod has resulted in an allround improvement, particularly in the texture, keeping properties, and flavour. "Cowiness" has been largely reduced, and "nshiness" is practically absent. New Zealand should erect dual plants with a view to the possibility of Canada I ceasing to export cheese in "the not disj tant future. Weddel's estimate of the prices of Australian and New Zealand butter and cheese next season are much below the last, but above the average of the preceding four years.
